In the vast stretches of Colorado’s northeastern plains, the story of Colorado Craft Beef runs deeper than a brand name. It reaches back over a century, to the promise of the Enlarged Homestead Act of 1909, Kara
Smith’s great, great grandfather settled this semi-arid land in 1913 and began building a life marked by
resilience and responsibility. 

Five generations later, Kara and
Jeff Smith carry that legacy forward.

Legacy is not something a family simply inherits. It is something each generation must choose to protect, adapt, and earn again. 

For decades, this land has been home to a family ranching operation built on hard work, stewardship, and care for the cattle. But as the cattle market shifted, and as consumers began wanting a closer connection to where their food came from, the ranch had to evolve if it was going to have a future. Not just for the current generation, but for their children, and for the generations who may one day choose to carry this work forward. 

That is how Colorado Craft Beef was born. 

Colorado Craft Beef is the story of 5th-generation ranchers becoming a 1st-generation beef company, not to leave ranching behind, but to carry it forward. The goal has always been to give customers a direct connection to the land, the cattle, and the people behind their beef. The company was built to honor the past while creating a clearer, more transparent path into the future. 

What started as shipping beef directly to families nationwide quickly became much bigger. The process led Colorado Craft Beef to take ownership of more of the journey, first with its own finishing program and then with its own harvest facility. Today, the company raises, finishes, harvests, dry ages, packages, and ships every cut under its name. 

It is not the easiest path, but it is the
standard Colorado Craft Beef was built on.

Rooted In Stewardship

Colorado Craft Beef sits near where Kara’s ancestors first settled, surrounded by native grass, seasonal forage, open sky, and the wildlife that has long shaped this country. Deer, antelope, coyotes, birds, cattle, horses, and people all move to the same steady rhythm of the land.

Out here, stewardship is not a slogan. It is the work we do every day, reading the grass, grazing with intention, and knowing when to rest the ground. In this semi-arid country, the land provides only when it is cared for with patience, humility, and respect. 

The old ways still matter here. Cattle work is still done horseback, not for nostalgia, but because it remains one of the most effective and respectful ways to move through the land and care for livestock. Tradition does not have to be left behind for progress to happen. When rooted in purpose, the two strengthen one another.

From Ranching to Direct-to-Consumer Beef 

Colorado Craft Beef was built around a simple belief: people deserve to know where their beef comes from. 

For too long, much of the beef industry has separated customers from the source of their food. Cattle move through distant supply chains, families buy a product with little knowledge of who raised it, and ranchers are often removed from the final relationship with the customer. 

We wanted to change that. 

By selling direct, we can connect families back to the ranch, back to the process, and back to the people doing the work. It allows us to share not only our beef, but the story, values, and responsibility behind it. 

That decision changed the future of our ranch. It gave us a way to preserve a 5th-generation legacy while building a 1st-generation beef company that could serve families nationwide. 

Built for the Next Generation

Everything we are building is rooted in a larger purpose. 

We are not just trying to sell beef. We are working to keep a family ranch alive, to create a future for our children, and to give them the choice to carry this legacy forward if they choose. That choice matters. A legacy only survives when the next generation sees meaning in it. 

For us, that meaning is found in the land, the cattle, the work, and the families who trust us to feed them.
